Mark is the newest member to join the MJSC team. He grew up on a small dairy farm
west of Faribault, MN and was heavily involved in the Rice County
4-H program. The ironic thing is that
Mark never showed cattle as a 4-Her, but had several achievements in the rabbit
project including the Minnesota Livestock Achievement award in 1989 with his
rabbit meat business. At age 35, he
started showing after purchasing Scottish Highland cattle. He currently has a small farm in Elkton, MN
where he and his wife Jamie, have Highland
cattle, a few horses, and a large number of rabbits used for meat and
show. The mission of their farm is to
show the public where their food comes from and how it can be grown in a
sustainable manner on a small scale. Mark has a B.S. in Food Science from North Dakota State
University and has worked
for a large food processor in southern Minnesota
for the last 16 years in quality assurance and R&D. He currently serves on the board of directors
for the North Central Highland Cattle Association and the American Highland
Cattle Foundation.
